Scope and Contents

The School of Food, Hotel and Travel Management records document the history and evolution of the school from 1937-1998. The collection contains clippings, correspondence, promotions and course guides. There are folders dedicated to the Sarah Gillam Award, an award given to distinguished alumni named after Sarah Gillam a well-known dietician and graduate of the Food Administration Department , Henry’s, the food management student run restaurant and Puttin’ on the Ritz, an annual fundraiser for the school organized by students.

The collection also includes materials documenting the rennovation of the 4th floor of the Eastman Building in1982 which created the space for Henry's restaurant, a student operated facility. Included are cost estimates, meeting minutes, news releases and building plans.

Biographical / Historical

The School of Food, Hotel and Tourism Management was part of the College of Business until 1982, then becoming part of the College of Applied Science and Technology. Formally known as the Food Administration Department, the school evolved over time and began to encompass four degree programs: Food Service Management, Hotel and Resort Management, Travel Management, General Dietetics and Nutritional Care.

In 1991 the choice was made to change the name again, this time to School of Food, Hotel and Travel Management. Becoming a pioneer within the food, hotel and travel industry the school developed partnerships with American Airlines, Disney and many prominent hotel chains. Annual events such as the formal black tie fundraiser, “Puttin’ on the Ritz,” were hosted, organized and prepared by the students.

Currently the school is part of the College of Applied Science and Technology (CAST) and is known as the School of International Hospitality and Service Innovation, which includes the Department of Hospitality & Tourism Management.

Materials are contained within 15 folders. The folders are arranged by subject and chronologically within each folder. The collection is divided into three series: Food Administration Department (1937-1988) School of Food, Hotel and Tourism Management (1974-1989) and School of Food, Hotel and Travel Management (1991-1998).
